If you can’t get enough of cakes, pastry, bread and you have your heart set on becoming a Patisseire this is the course for you to hone your skills using a selection of techniques building on your existing knowledge, to enable advanced techniques.
The first thing you’ll notice about this course is that it’s about practical learning – you’ll be spending a lot of time in our dedicated pastry kitchen, preparing a range of delicious baked goods, which can be sold in our little shop.
You’ll be looking at everything and producing delights from the world of pastry: fermented dough and batter products, petits fours, paste products, hot cold and frozen desserts, biscuit cake and sponges, chocolates, and as you progress, you can let your imagination run wild and produce a showpiece. To get you ready and prepared for work you will also undertake food safety supervision, supervision in the professional kitchen, sustainability and gastronomy.
